I'm looking to install a thumb throttle and full grips on my 2021 Rover 5. Any experience or suggestions would be great. Thanks.

Wuxing 130X throttle, full MTB grips. Red devil Pro riser handlebar etc.

Is it hard to remove the stock grips from the handlebars? Is it just removing that plug and then slowly twist them off?

Pretty much. If you have an air compressor, blast air into a gap between the grip and the bar and they will float off as you pull with your other hand.
