Mine does the same thing sometimes. I'll come to a stop and a bar will magically appear, then vanish as I take off. Same with slight hills. You'll discover other little quirks once you get some miles on the bike. But I wouldn't worry about it.

Dropping one bar, then recovering, is normal in some cases. Dropping two bars is not.
Balance your battery by charging it for 12 hours. This should fix any low individual cells inside your battery pack. Use the bike and if the problem persists, contact Rad customer support.

I believe I've seen the OEM led indicator on my Radrunner drop more than one light under a heavy load of more than a few seconds (a hill). A few minutes later, I could do the same thing without losing lights. I think battery temperature is a factor. The first hill warms the battery, so it works better subsequently.

Cranking, a car battery might drop to 11 volts warm and 8 volts cold. When the electrolyte is cold, the ions can't move as fast, resulting in less voltage under load.

Voltage in a battery will drop under a load. You will see the battery drop 1 bar while riding then the bar will come back when you stop. I have never seen my battery drop 2 bars then come back on my Rover. I would charge and balance the battery. If it still drops 2 bars I would contact Rad Power Bikes.
